Golden Coconut Latte

I hate getting groceries.

I’ve never particularly enjoyed the chore, but add in a mask (which means i can’t bring my coffee) and arrows telling me which direction to walk, and i will put it off forever.   Long story short, this has become Asher’s job.

He is the most efficient grocery shopper of all time.  I have never seen anything like it.  He always finds the closest parking spot, walks so fast, gets everything on the list, and even manages to find all of the best deals.  On the rare occasions where i go along and attempt to help, he sends me on one task and by the time I find the chicken breasts, he has finished the rest of the list and is waiting for me in line.  Honestly if this wasn’t such an asset for me, I would find it incredibly obnoxious.

Another benefit is that he sometimes brings home surprises.  Now usually that means a new flavor of ice cream or cookies that caught his eye.  Imagine my surprise this week when he came home excited about buying a caterpillar.

Okay, it wasn’t actually a caterpillar..  but it was an orange/brown, had scales, and looked like it would get up and walk away at any time.  After I made about ten jokes about the critter he adopted, he told me it was fresh turmeric.  I’ve used ground turmeric for a chicken dish in the past (delicious), but had never worked with it fresh.

Come up with a new recipe inspired by fresh turmeric?  Challenge accepted. 

I decided on a coconut milk based golden latte.  It’s a really simple recipe and the perfect afternoon pick me up.  I pared the fresh turmeric with some fresh ginger for a really delicious spice combination and the honey adds a touch of sweetness.  The hint of coconut ties it all together.  It is warm, spicy, creamy, and anything but another boring cup of coffee.


Ingredients

  • 1 can coconut milk (13.5 oz)
  • 2 teaspoons fresh turmeric
  • 2 teaspoons fresh ginger
  • 2 tablespoons coconut oil
  • 2 tablespoons honey
  • 1 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Peel and grate or finely chop the ginger and turmeric
  2. Heat the coconut milk and coconut oil over medium heat until the oil is melted 
  3. Add the ginger and turmeric and let simmer (~5 minutes)
  4. Add the remaining ingredients
  5. Blend with an immersion blender and enjoy hot with an extra sprinkle of cinnamon (makes enough for two)

Warning:  the turmeric will definitely stain your skin..  it lasts a few days, so wear gloves if you don't want orange fingers.  Lesson for next time..

Notes:  If you aren’t a fan of coconut milk, you can sub for any other milk substitute (almond would work really well).  Also, if you don’t have an immersion blender, you can use a regular blender, just make sure the model you have can handle hot liquids.  

You can drink it as is or pour it over a couple of shots of espresso.  I’ve also used it as a creamer in my morning coffee.  You can’t go wrong.

    This looks delicious! I was going to ask about substituting with an almond or oat milk since I usually have one of those in the fridge :) glad you said almond milk would be a good one! Thanks for the recipe and tips!
