Sunday Morning Frittata

Sunday has always been my favorite.  

It’s the slowest day of the week, full of a lot of restful relaxation.  It’s also Asher’s day off, so it’s the one day that we get to spend a lot of time together. 

We used to grab lunch after church, but as things shut down last year, I started making Sunday brunch instead.  For most of quarantine, Asher has been leading worship for our church, so he leaves the house early and I get a slow morning with church online (sometimes from the bath tub) and then surprise him by concocting something fun for brunch.  He usually calls on the way home to ask if it’s going to be savory or sweet (and to make sure it’s going to be done in time because he is always starving). 

This morning I had some bacon thawed in the fridge, so I decided to do a bacon frittata with cheese, garlic, and onion.  It’s basically a huge omelet and it’s a really quick recipe that’s fun and easy to make.  Meaning I also got time to sit and enjoy my coffee before he got home.  

Win win win.


Ingredients

  • 1/2 pound cooked bacon
  • 6 eggs
  • 1/2 large onion
  • 1 clove garlic
  • 1/2 teaspoon dried parsley
  • 1/2 cup cheese
  • 1 tablespoon butter

Instructions

  1. Set the oven to broil
  2. Melt the butter in a ten inch cast iron over medium heat
  3. Add the onions and cook until soft
  4. In the meantime, whisk the eggs in a medium bowl
  5. Add the cheese, parsley, and a sprinkle of black pepper to the bowl with the eggs and set aside
  6. To the cast iron, add the bacon and garlic (finely chopped) and continue to cook until fragrant 
  7. Pour the egg mixture over the onions and bacon
  8. Cook for a few minutes until the sides start to solidify, then move to the top rack of the oven under the broiler
  9. Broil for about 4 minutes or until the eggs are solid and the top is lightly browned; watch closely so it doesn’t burn
  10. Serve hot with potatoes or toast

This Sunday tradition was something we created to bring a little fun to the ever dragging days of quarantine.  As I write about it, I know that it’s coming to an end.  I’ve already over-stayed my welcome with church at home and i need to start leaving the house again. But I’m really going to miss this.
