Blueberry Margaritas!

It is no secret that i love wine (I am a millennial after all), but every now and then i decide to switch up the living room happy hour a bit.  As a side note, i've found that the tradition of happy hour is an important one for me now that i'm working from home.  It takes time to transition my brain from desk life to home life and so i'll usually have a drink of some sort.  Sometimes it's wine, sometimes it's coffee, sometimes it's even water... but the little ritual has been a good one.

Today, my inspiration was limes and for some reason i decided it was time for a frozen drink.  For reference, it is currently below 30 in Connecticut and it's also super windy..  which is making the house let out little creaks..  which is then sending the dog off to investigate.  Basically it's a New England Winter at its best.

So maybe i'm playing pretend with frozen blueberry margaritas, but when i close my eyes, it's the middle of summer and I'm under the sun by a river listening to the birds.

Come join me!

Ingredients

  • 4 oz tequila
  • 1 1/2 oz simple syrup
  • 1/3 cup blueberries
  • 1 lime
  • 1/2 t orange bitters
  • Ice
  • Salt (for the glasses)

Instructions

  • Juice the lime into a bowl that is wide enough to dip the rims of your glasses in
  • Dip the rims of 2 glasses in the lime juice and then swirl them into a small pile of salt
  • Add the remaining lime juice and the remaining ingredients to a blender and blend; Start with 1 cup of ice and add more until you reach your desired consistency
  • Pour into your glasses and enjoy!

Note: If you don't have simple syrup, it's really easy to make your own.  Just pour equal parts sugar and water into a pot, heat it until the sugar is dissolved, and let it cool.

ps.. is the mason jar trend still a thing??  what replaced it?  please help :)
